Honey Mint Lemonade

There is nothing more refreshing on a hot summer day than a glass of lemonade. Sometimes,

That is why we have started making lemonade at home. We decrease the amount of sugar that we put into our syrup that serves as the base for the lemonade, and we often substitute maple syrup or honey for something a little bit healthier.

One bonus of using honey is that you can use even less honey than our decreased amount of sugar because the sweetness factor of honey is even more powerful than white sugar.

This recipe was created during the height of our mint season, when we were exploring all of the ways to use fresh mint. Kids and adults alike love the unique flavor!

Honey Mint Simple Syrup

Recipe: Honey Mint Lemonade

Ingredients

4-6 fresh mint leaves, plus more for garnishing

1/4 cup honey (local honey is best, so you know its true content)

1 cup lemon juice (freshly squeezed is delicious but not necessary)

water

Directions

Make the simple syrup: Add the honey and mint leaves to one cup water in a small saucepan; bring the mixture up to a low simmer to melt the honey then remove from the heat and let the mint steep for about 15 minutes.

Make the lemonade: Remove the mint leaves and add you lemon juice to the syrup. Pour the whole mixture into a pitcher and add about 4 cups more water (you can play with this amount depending on how strong or light a flavor you want).

Pour into glasses over ice, garnish with a mint leaf or two (this really adds a nice aroma when drinking), and enjoy!
